This Christmas was SOO much fun. Henri was really understanding things more this year. For the first time since we've been married, JP had Christmas day off from work. It was so nice waking up in the morning and opening presents with Henri. We went light on the presents and enjoyed watching his face as he opened his bumble bee pillow pet and tickle me Elmo. We also bought him a keyboard. My mom and brothers came over around 10:30 and we relaxed and chatted before opening presents. Henri loved the company and went from one lap to the other smiling and playing.
For our dinner I attempted to make Beef Wellington......I use the word attempt, because it didn't come out just as I planned. This very complicated dish has many steps, all of which I followed to the letter. Unfortunately, instead of cooking the dish in the oven at a high temp for 40 minutes and a lower temp for 30, I mistakenly shut the oven OFF for the last 30 minutes. Needless to say, my Beef Wellington was RARE, RARE, RARE in the center!! My lovely family said nothing and ate around the bits that were practically cold in the middle. I was so disappointed that it didn't come out the way I had planned. However, the next time I prepare Beef Wellington, it will be PERFECT!!
Our Christmas celebration did not end there! The following day we went to the Breaux's for our Christmas gathering. Henri was delighted to see Meme and Pepe and Aunt Nikki. They all showered him with gifts, among his favorite was the Thomas the Tank Engine set and a miniature pony from Aunt Nikki. The weekend couldn't have been more perfect!!
Next year Henri will have to share all the attention with his new sibling!!
